Due to following lots of food accounts on Instagram and obsessing with how good the food looks, I decided to make something a little different for breakfast in the form of banana and cinnamon pancakes. I have of course had chopped up banana alongside pancakes but I have never thought of using chopped banana actually in the batter, until now.
After seeing lots of pictures of banana pancakes on Instagram, I took to Pinterest to search for a recipe and I found a good one. It's really simple and quick too and you don't even need an egg!
This is the perfect amount for one person (well for me anyway).
1 cup of plain flour
1/8 teaspoon of salt
1 and a 1/2 teaspoons of baking powder
4 teaspoons of white sugar
1 and a 1/2 cups of milk
1 small chopped up banana
1/2 teaspoon of cinnamon
Mix all the ingredients together. If the batter is too thick, add milk a little at a time to make it runnier. If the batter is too thin, add a little extra flour.
Spoon the batter into the pan and cook until they turn a golden brown on both sides and then tuck in! I garnished mine with another cut up banana and that's all the extra I needed because of the hint of cinnamon from the pancake. That's one of your 5 a day eaten too but in a scrummy way!
